Mom's Mini Eggplant Pizzas

Mom's Mini eggplant Pizzas made with Grammaw Knows Italian Gourmet Seasoning and Grammaw Knows Everything Gourmet Seasoning


  • 1 large eggplant sliced into 1 inch thick rounds
  • 2 teaspoons of Grammaw Knows Italian
  • 2 teaspoons of Grammaw Knows Everything
  • 1/4 cup of avocado oil
  • 1 14oz Jar of all natural Pasta sauce
  • 1 cup of reduced fat 4 blend Mexican cheese
  • 1/4 cup of sliced onions
  • 1/4 cup of diced sweet bell peppers
  • 1/2 LB ground turkey
  • 3 cloves of garlic chopped
  • Fresh Basil


  1. Wash and slice Eggplant into 1 inch rounds (lay on paper towel to drain)
  2. Preheat oven to 400 degrees
  3. On medium heat in a saucepan, sauté your ground turkey, onions, peppers, season with Grammaw Knows Italian and Grammaw Knows Everything.
  4. Drain your meat mix and add back to saucepan
  5. Stir in Pasta sauce let simmer on med heat for 15 mins to thicken up sauce.
  6. Use your avocado oil to grease the bottom of a cookie sheet place your eggplant on the cookie sheet and scoop enough meat mixture to cover the top of each eggplant.
  7. Sprinkle cheese on each eggplant
  8. Sprinkle garlic on top of cheese
  9. Bake at 400 for 15 minutes or until eggplant is tender
  10. Remove the finished eggplant with a spatula because they will be tender top with fresh basil
